Fresh Strawberry Muffins | realmomkitchen.com

Last year we planted strawberry plants, but you don’t get strawberries until the year. Well it’s that time now, and my husband and kids harvested our first batch. My cute husband came in and immediately washed the strawberries. I told him you aren’t suppose to wash them, until your ready to use them. So I had to use up my strawberries. Luckily I had just found this recipe for Fresh Strawberry Muffins from A Recipe A Day.

These muffins were tender and delicious. The down side is you really have to make these the day you bake them. I put some in a container for the next day and they were not so great. Because the strawberries have a lot of moisture in them and the muffins are so moist, they get gooey and gross the next day.


Here is what you need to make the

Fresh Strawberry Muffins

  • BUTTER
  • SUGAR
  • EGG
  • FLOUR
  • BAKING POWDER
  • SALT
  • MILK
  • VANILLA
  • STRAWBERRIES
  • CINNAMON

Instructions

  1. Cream butter and sugar. Add egg and mix well.
  2. Sift flour, baking powder, and salt in a small bowl. Add flour mixture and milk alternately to butter mixture. Add vanilla. Gently stir in strawberries.
  3. Spoon batter into muffin pans.
  4. Combine sugar and cinnamon and sprinkle over muffins.
  5. Bake at 400º for 20-25 minutes. Makes one dozen muffins. (Make sure you eat them the day you bake them. They aren’t so great the next day.)

We love these muffins. After they cool, I freeze them on a cookie sheet uncovered. After they are frozen I put them in a freezer bag and pull out just what we need. Let them set to thaw. They are moist and keep very well. We can’t eat them all in a day.

Yummy! I used this same recipe to make chocolate chip muffins. Also very yummy! Then becaues I had left over chips and strawberries, I made chocolate strawberry muffins for desert tonight. They were delicious! My whole family says, Thank you! for this recipe.

just made these last week. the note at the end of the post says to eat them the same day. i put my leftovers in the freezer once they had cooled. just popped one in the microwave for about 35-40 seconds and it tasted just as good as right out of the oven! i’m making batches of muffins for a family reunion coming up and these are definitely on the short list

Thanks for the tip about not getting strawberries the first year. I planted some in “strawberry pots” this spring. I have some tiny strawberries, but not a “harvest”. I don’t think my family would have any trouble eating up those wonderful muffins!! Those look delicious!
