Frozen Beet Cake
Just because it’s cold outside doesn’t mean you can’t enjoy a frozen treat. If you are looking for an ice cold confection this fall, try this beautiful, sweet frozen beet cake.
- 3 small steamed or baked and peeled beets (steam or bake the beets until soft)
- 5 medium bananas
- 2 teaspoon cocoa
- 1 teaspoon carob
- 1 tablespoon honey
- 2 tablespoon unsweetened desiccated coconut meal
- Combine all of the above-required ingredients in a high-speed blender and blend them until the content becomes very smooth. Place the mixture into an adjustable cake mold and freeze it for at least 2 hours. Enjoy the cake with fresh seasonal fruit as garnish.
