Quick, easy and delicious – those are the prerequisites for muffin recipes at our house and these fruit and veggie muffins definitely fit the bill. They even get bonus points for including something healthy and filling, and are definitely worth the effort.

Fruit and Veggie Muffins - with apple and carrot these muffins are quick and easy to make and delicious!

These moist muffins contain lots of grated carrot and apple, some oats to fill up my bottomless pit children, and sultanas and dried cranberries for extra fruity deliciousness. But the best thing about these golden muffins is that you can use homemade muffin mix to make them so they are super quick and easy to bake.

Using my homemade muffin mix I can have a batch of these muffins ready to put in the oven in around five minutes.

But even if you make them from scratch this recipe uses one bowl, simple ingredients, and has easy instructions, so even the kids can make these.

Switch out the cranberries for nuts or pepitas for an extra nutritional boost, and you can make these with 100% wholemeal (whole wheat) flour, just up the liquid content a little.

We sprinkle the top of our fruit and veggie muffins with a little cinnamon sugar (because everything tastes better with cinnamon sugar) but they would be delicious with a bit of cream cheese frosting!

Use our easy homemade muffin mix or make these delicious muffins from scratch.

Ingredients

Using Muffin Mix

  • 1/4 cup oil

  • 2 eggs

  • 2 1/2 cups of homemade muffin mix

  • 1/2 cup quick cook oats

  • 1 cup grated carrot

  • 1 cup grated apple

  • 1/2 cup sultanas

  • 1/2 cup dried cranberries

  • 1 tsp cinnamon

  • 1 tsp allspice

  • 3/4 cup of milk

Making From Scratch

  • ¾ cup of sugar

  • ¼ cup of oil

  • 2 eggs

  • 2 cups plain flour

  • 2.5 tsp baking powder

  • 1/2 cup quick cook oats

  • 1 cup grated carrot

  • 1 cup grated apple

  • 1/2 cup sultanas

  • 1/2 cup dried cranberries

  • 1 tsp cinnamon

  • 1 tsp allspice

  • 3/4 cup of milk

Instructions

Preheat your oven to 180 Celsius and line a muffin tin with paper cases


If you are using the homemade muffin mix:

  1. In a large bowl combine the eggs and oil and beat well.
  2. Add the muffin mix, cinnamon, allspice and milk and combine.
  3. Mix in the grated carrot and apple, and add the sultanas and cranberries.

If you are making from scratch:

  1. In a large bowl combine the sugar and oil, add the eggs and beat well.
  2. Add the flour, baking soda, cinnamon and allspice and milk and mix well.
  3. Stir in the carrot, apple, sultanas and cranberries.

Fill your muffin cases almost to the top and bake in a moderate oven for 25-30 minutes until they begin to brown on top and a skewer comes out clean.
