Ingredients:

  • Muffins:
  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/3 cup vegetable oil
  • 1 egg
  • Milk (about 1/3 cup)
  • 1 cup fresh or frozen blueberries
  • Crumb topping:
  • 1/4 cup white sugar
  • 3 tbs flour
  • 2 tbs butter
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg

Instructions:

  1. Preheat oven to 400 F
  2. Place paper muffin tin liners in pan
  3. Combine flour, salt, baking powder and sugar in large bowl.
  4. In a 1 cup measuring cup, combine 1/3 cup oil, egg, and enough milk to top off the 1 cup (about 1/3 cup)
  5. Add to flour mixture and mix to combine
  6. Gently fold in blueberries (defrost first if using frozen berries)
  7. Spoon batter into muffin tin, filling each tin to the top
  8. In a small bowl, combine sugar, flour, cinnamon and nutmeg for crumb topping.
  9. Cut in butter.
  10. Top each muffin with a spoon full of topping
  11. Bake for about 20 minutes, until golden brown and a toothpick comes out clean.
