Hi friends! Are you a fan of ROCKY ROAD? The candy, the ice cream…if it has chocolate, marshmallows and nuts you can sign me up! Well today we’re sharing an easy and amazingly delicious Rocky Road Cake with you that we whipped up with Pillsbury’s new Purely Simple cake mix!
Pillsbury Purely Simple ups your baking game by making it so very easy to make a cake using a mix that contains NO colors, preservatives, or artificial flavors, for a homemade taste that’s simply scrumptious. We headed down to our local Kroger store to try them out!

Right where you’d expect them, the new mixes were in the baking isle. And as “icing on the cake” right now you can save $0.50 on 1 mix with this coupon (available: 10/19-11/15 Exp. 11/30).

So for our Rocky Road Cake, we simply started with the amazing Pillsbury Purely Simple chocolate cake mix and baked according to the directions. Just add eggs and butter and you’re ready to rock some Rocky Road!

Once the cake was baked, we topped it with marshmallows, nuts and decadent chocolate frosting. And WOWZA. Let me tell you this was one of the most delicious cakes I have had in a long time! Like the kind that you can’t leave around the house because you’ll EAT IT ALL kind of cake.

Ingredients

Pillsbury Purely Simple Chocolate Cake mix -
3
cups
miniature marshmallows -
1
cup
chopped pecans -
1/2
cup
butter or margarine -
1/3
cup
milk -
3
heaping tablespoons cocoa -
1
package powdered sugar
16-ounce -
1
teaspoon
vanilla extract
Instructions

Prepare Pillsbury Purely Simple Chocolate cake mix as directed on package, pour into 9×13 inch pan and bake.

When cake is done, sprinkle with miniature marshmallows and nuts.

Put back in oven, and bake until marshmallows begin to melt.

Remove from oven and let cool.

In a heavy sauce pan, over medium heat, bring butter, milk, and cocoa to a boil, stirring until butter melts.

Remove from heat; beat in powdered sugar and vanilla.

Pour frosting evenly over cake in pan.

Serve warm.

Now you can serve it up warm – all ooey gooey with chocolate and marshmallow goodness. Even top it with a little ice cream! Or let it cool and trust me, it’s just as good!
