Hi Friends! Happy Monday! I know I usually start with a breakfast post, but todays egg white pancake turned into more of a scramble. It’s better if I recycle an old picture, dont’ flip it too early!
Today I’m just popping in to share with you a quick and hearty snack idea, smoked salmon cheddar melts! I had this a few times last week and I know it’s the simplest thing ever but I thought I’d share it with you for a snack idea.
The real star of the show here is the Cabot cheese, which comes from dairy farmers throughout New England and New York. Right from opening the cheese you can tell the quality is different that the regular old store brand stuff, it immediately smells the whole kitchen up! Yuuummmmmmm the smell of aged cheese is weirdly amazing!
I rarely go a day without cheese in some form or another, as a snack on it’s own or paired with something cheese keeps me full and happy. This Cabot cheese is definitely an extra special, pungent and delicious treat. I know this isn’t even technically a recipe, but I had to include it because the combo was so good! Over the week I’ll be sharing a series of snack/appetizer recipes with you using Cabot cheese including some knock it out of the park game day recipes, so stay tuned!
- 1/2 whole wheat english muffin
- 1/2 ounce Cabot Cheddar (I loved the Vermont Cheddar)
- 1 ounce smoked salmon
Directions: Broil cheese on top of english muffin in toaster oven or regular oven until toasted and bubbly, top with smoked salmon and serve immediately! Then you’ve got a hearty and filling snack that will keep you going!
