  • 2 tsp. cake flour (see hint)
  • 1 1/2 c. cake flour (see hint)
  • 1 c. sugar
  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground cloves
  • 1/4 tsp. ground nutmeg
  • 1/4 tsp. salt
  • 1/4 c. canola oil
  • 1/4 c. apple butter
  • 1/4 c. apple juice
  • 1 tsp. vanilla
  • 8 egg whites
  • 4 tbsp. Confectioners’ sugar
  • 1/4 c. maple syrup


    1. Step 1Preheat the oven to 350°F. Coat a 10-cup Bundt pan with no-stick spray. Sprinkle with 2 teaspoons of the flour and tap out the excess.
    2. Step 2Place the remaining 1 1/2 cups flour in a large bowl. Add the sugar, baking powder, cinnamon, cloves, nutmeg, and salt. Mix well.
    3. Step 3In a small bowl, combine the oil, apple butter, apple juice, and vanilla. Mix well. Pour into the bowl with the flour. Using an electric mixer, beat on low speed just until blended. Do not overmix.
    4. Step 4Place the egg whites in a medium bowl. Using an electric mixer with clean, dry beaters, beat on medium speed until foamy. Add 2 tablespoons of the confectioners’ sugar. Increase the speed to high and beat until firm and glossy. Fold into the batter.
    5. Step 5Pour the batter into the prepared pan and bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan on a wire rack for 5 minutes. Unmold onto the rack and use a wooden skewer to poke holes in the top of the cake.
    6. Step 6Place the maple syrup in a small microwave-safe bowl. Microwave on high power for 30 seconds, or until warm. Drizzle evenly over the cake and let cool completely. Dust with the remaining 2 tablespoons confectioners’ sugar.
To make your own cake flour: For each 1 cup of allpurpose flour, replace 2 tablespoons with 2 tablespoons cornstarch.
