  • 1 7.5 ounce box corn muffin mix such as martha white or jiffy.
  • 10 ounces frozen spinach, thawed chopped and drained
  • 2 whole eggs
  • 1 stick margarine
  • 8 ounces cottage cheese


  1. Thaw, drain and remove most of moisture from Spinach. (I always give it a final squeeze in a paper towell.)
  2. Mix spinach well with remaining ingredients .
  3. Bake in a 9x9x2 pan in a 350 degree oven for about 40-45 minute
