  • 1 c. all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. ground cinnamon
  • pinch of salt
  • 1/2 c. fat-free plain yogurt
  • 1/4 c. canola oil
  • 2 large eggs
  • 1/2 c. brown sugar
  • 1 tsp. lemon extract
  • 1/2 c. dried plums, finely chopped
  • Confectioners’ sugar


    1. Step 1Preheat the oven to 350°F. Coat a 9″ round cake pan with cooking spray. Set aside.
    2. Step 2In a large bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. In a large bowl, beat the yogurt, oil, and eggs with a fork until blended. Add the sugar and lemon extract. Beat until smooth. Stir in the dry ingredients until just blended. Add the dried plums and stir to mix. Pour the batter into the prepared pan.
    3. Step 3Bake 25 to 30 minutes, or until browned and the cake springs back when lightly pressed. Let cool on a rack for about 10 minutes. Dust lightly with confectioners’ sugar. Serve warm.
