  • 2 eggs
  • 3/4 cup dark brown sugar
  • 1/4 cup butter, melted
  • 1/4 cup milk
  • 1 medium zucchini
  • 2 bananas
  • 2 cups all purpose flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1/4 cup oats – (for topping)
  • 2 tablespoons brown sugar (for topping)


  1. Grate the zucchini and place that in a bowl.
  2. Mash the 2 bananas and set aside.
  3. Squeeze out the zucchini and place that back in the bowl, add the mashed banana and stir.
  4. Meanwhile, in my kitchen-aid mixer I added the 3/4 cup brown sugar and 1/4 cup melted butter and beat that for a minute or so.
  5. Add the rest of the ingredients and mix until it's all combined.
  6. Take a 12 muffin tin, spray it with cooking spray and using a 1/4 cup measure scoop the batter into each tin.
  7. Mix together the oats and brown sugar and sprinkle a little on each muffin.
  8. Bake in a preheated 375 degree oven for 15-17 minutes or until a toothpick comes out clean and they are nicely browned
